Beet Soup

Beets have the highest sugar content of all vegetables, yet are very low in calories. These vegetables contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. Follow the step-by-step recipe below for a delicious beet soup. Very different for sure!

Ingredients:

1 bunch of beets, 1 lb carrots, 4-5 potatoes, 4 cups chicken broth, salt & pepper, and optionally some brown sugar.

1. Boil

Select small or medium-sized firm beets, smooth-skinned and deep in color. Avoid beets that have spots & bruises. Wash & scrub these roots in cold water. Chop off the top & bottom so you end up with the roots only. Do not peel yet. Place in a pot, cover with water, and add some salt. Boil the beets for about 20 minutes or until soft.

Once cooked set the beets aside to cool off, then peel.

2. Prepare Carrots

Prepare & wash about 1 lb of baby carrots. If you only have large carrots, then peel and chop into small chunks.

3. Prepare Potatoes

Wash & peel 4-5 medium size potatoes and then cut into cubes.

4. Cube Beets

Cut the cooked beets into cubes.

5. Cook

Add the potatoes and carrots into a pot with chicken broth and boil until soft. Add the cubed beets. Taste the soup and if necessary add salt, pepper, and a little brown sugar if you prefer the soup to be sweeter.

6. Enjoy

This is the best part: Ladle into soup plates, eat hot or cold and enjoy!
