Quick Gourmet Potato

This is such an easy and quick side dish to prepare, and is always delicious with most main dishes. All you need is potatoes, salt, pepper, chopped parsley, and Smart Balance. My preference is for using Smart Balance 37% Light Buttery Spread instead of margarine or butter since in addition to tasting great and having no cholesterol, it consists of a combination of Omega-3 fatty acids from flax and fish oil. Enjoy!

1. Peel Potatoes

Select one or more potatoes. Rinse then peel the skin of each potato only half way.

2. Slice

Use a small kitchen knife to slice each potato about half to three quarters through, but not all the way.

3. Add Spices and Smart Balance

Sprinkle with salt & pepper, add chopped parsley, and add about a teaspoon of Smart Balance on top. Optionally, you can use butter or margarine instead.

4. Nuke Them

Place in the microwave for about 3 min or so per potato. If your microwave has a potato option, just select how many potatoes you want to cook. That's it. Just delicious!
